Recipe Corner

A taste of the season

Classic Cuban Mojito

Serves 1
Ingredients
  • 10 fresh mint leaves
  • ½ lime, cut into wedges
  • 2 tsp sugar
  • 2 oz (60 ml) white rum
  • Sparkling water or club soda
  • Ice, mint sprig & lime slice to garnish
Instructions
  1. Place lime wedges and sugar in a tall glass.
  2. Add mint and gently muddle to release the aroma — don't crush too hard.
  3. Fill with ice, then pour in the rum.
  4. Top with sparkling water, stir gently, and garnish.
💡 Pro-tip: Always use fresh lime and fresh mint for the best flavor and aroma.

Peruvian-Style Ceviche

Serves 4
Ingredients
  • 1 lb fresh white fish (corvina, tilapia, or mahi-mahi)
  • Juice of 8–10 limes
  • ½ red onion, thinly sliced
  • 1 chili pepper, finely chopped (optional)
  • 2 tbsp fresh cilantro · 1 small garlic clove, minced
  • Salt, pepper, ½ tsp grated ginger (optional)
Instructions
  1. Cut fish into medium cubes; place in a chilled bowl.
  2. Season with salt, pepper, and garlic.
  3. Add lime juice until the fish is fully covered.
  4. Mix in red onion, chili pepper, and cilantro.
  5. Stir gently and marinate 5–10 minutes.
  6. Taste, adjust seasoning, and serve immediately.
💡 Pro-tip: Use very fresh fish and don't over-marinate — too long in lime juice makes it tough.
